The legend of massepain dates to 1,800 BC in ancient Egypt where villagers blended crushed almonds and honey together. The French believe that the Crusaders carried it back from Persia to their homeland during the Dark Ages where nuns in France carried on the traditional recipe. During the Renaissance, the kings of France cherished this delicacy; baking it into small cookies called “massepains.” Lightly baked, it gives a crusty outside and remains chewy on the inside.
